Ingredients:
- 3 kiwi fruit peeled and diced
- 1 lime juiced
- 10 mint leaves (fresh)
- 2 cups sparkling water or kombucha
- 1 teaspoon sweetener of choice (optional)

Instructions:
- To decorate the glasses, as shown in the picture, peel kiwi fruit, then cut into thin (approx 4-5mm) slices. Press gently onto the inside of the glass. I used some big ice blocks to hold the kiwi pieces in place.
- Place kiwi fruit, lime juice, mint leaves and sweetener (if using) in a high speed blender.
- Blend until smooth.
- Divide between 2 ice-filled glasses and top with sparkling water or kombucha.
- Garnish with mint or extra kiwi.
