Chicken and Vegetables Skillet



Ingredients:

  • 1 lb (450g) skinless, boneless chicken breast (organic), cut into 1-inch pieces
  • zucchini, sliced
  • red bell peppers, chopped into chunks
  • broccoli crown, broken into florets
  • 1/2 onion, sliced
  • 1/4 teaspoon salt and pepper
  • 2 tablespoons olive oil
  • 2 tablespoons Cajun seasoning
  • 1/4 cup (60ml) low-sodium chicken brot
  • 1 tablespoon fresh chopped parsley, for garnish
  • 1/2 teaspoon red chili pepper flakes, optional

Instructions:

  • First, cook the chicken breast: Season chicken bites with salt and pepper, olive oil, and cajun seasoning. Sautee the chicken bites for about 5-7 minutes until cooked through and browned.

    Cook the vegetables: In the same skillet, stir fry the onion, then add the rest of the vegetables. Season with Cajun seasoning and cook on medium until vegetables are crisp-tender.

    Deglaze the pan with chicken stock, then add the cooked chicken bites back to the skillet and mix with the veggies to combine.

  • Serve over rice.

TIPS FOR THE CHICKEN AND VEGETABLE RECIPE

  • Work to cut the chicken into regular size pieces so it cooks evenly. And be careful not to over-cook the chicken, otherwise, it will be dry and tough.
  • Stir-fry your vegetables until tender-crisp, not too soft and mushy.
  • This chicken recipe with vegetables is all about the spicy Cajun flavors, don’t skimp on seasoning!
  • Diced boneless skinless chicken thighs will work great too. Add a few extra minutes to cook time.
  • You can blanch the broccoli florets in boiling water before throwing them into the skillet if you like them more tender.
  • Add a drizzle of lemon juice to brighten up the chicken if you like.
