Vegetarian Meatballs


Ingredients


2 1/2 Cups organic cracker crumbs (roughly 1 1/2 package)
1 1/2 Cups Vegeburger Crumbles (dehydrated - see recipe in this blog)
1 large onion, chopped finely
1 1/2 Cup organic longhorn cheese, grated 
1 tsp. Himalayan salt
6 T fresh parsley, minced
1 T sage
6-8 eggs
3 garlic cloves, minced

Instructions

  1. Make the Vegeburger Crumbles ahead

  2. Add the ingredients together in a mixing bowl. Stir well.

  3. Preheat oven to 400 degrees F. Coat a large rimmed baking sheet with cooking spray.

  4. Form the mixture into 16 balls (about 1/4 cup each) and place on the prepared baking sheet. Lightly coat with cooking spray. Bake until lightly browned and firm, 20 to 25 minutes.

  5. Or...  form the mixtures in 16 balls and fry until lightly browned and firm.
