Ingredients:
- 3 cups Jasmine Rice
- 3 cups vegetable broth
- 3 cups, canned, diced tomatoes
- 1 onion (brown), finely diced
- 1 Tbsp minced garlic
- 2 Tbsp butter (or vegan alternative)
- 1/2 tsp oregano
- 1 tsp cumin
- 1/2 tsp salt
- 1/4 chili powder (or more for spicier rice)
Directions:
- Place all ingredients in the Rice Cooker.
- Stir thoroughly to ensure the flavors are evenly mixed throughout.
- Turn on the Rice Cooker- set to cook for Brown Rice - or timed for 50 minutes. Press start to cook.
- When cooking is finished, fluff rice with a fork and serve hot.
Yield: 8-12 servings
