Spanish Rice - Rice Cooker

 

Ingredients:

  • 3 cups Jasmine Rice
  • 3 cups vegetable broth
  • 3 cups, canned, diced tomatoes
  • 1 onion (brown), finely diced
  • 1 Tbsp minced garlic
  • 2 Tbsp butter (or vegan alternative)
  • 1/2 tsp oregano
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/4 chili powder (or more for spicier rice)

Directions:
  1. Place all ingredients in the Rice Cooker.
  2. Stir thoroughly to ensure the flavors are evenly mixed throughout.
  3. Turn on the Rice Cooker- set to cook for Brown Rice - or timed for 50 minutes. Press start to cook.
  4. When cooking is finished, fluff rice with a fork and serve hot.
Yield: 8-12 servings
