Ingredients:
- 1 pound broccoli florets
- 4 T olive oil, divided
- salt and pepper to taste
- 1 orange
- 2 T orange juice
- 1/4 cup mayonnaise (or substitute)
- 1 T white wine vinegar
- 1 T orange marmalade
- 2 tsp Dijon mustard
Directions:
- Toss 1 pound broccoli florets with olive oil, salt and pepper.
- Char in a hot cast-iron skillet, 5 minutes,
- then roast at 500˚ F until tender, 8 to 10 minutes.
- Remove broccoli from heat and set aside.
- Cut out the segments from 1 orange. Add to broccoli.
- Whisk 2 tablespoons of orange juice with 1/4 cup mayonnaise, 2 tablespoons olive oil, 1 tablespoon each white wine vinegar and orange marmalade and 2 teaspoons Dijon mustard.
- Drizzle the broccoli and orange segments with the dressing.
- Toss to coat.
Yield: 4 servings
