Roasted Broccoli with Creamy Orange Dressing


Ingredients:

  • 1 pound broccoli florets
  • 4 T olive oil, divided
  • salt and pepper to taste
  • 1 orange
  • 2 T orange juice
  • 1/4 cup mayonnaise (or substitute)
  • 1 T white wine vinegar
  • 1 T orange marmalade
  • 2 tsp Dijon mustard

Directions:
  1. Toss 1 pound broccoli florets with olive oil, salt and pepper. 
  2. Char in a hot cast-iron skillet, 5 minutes, 
  3. then roast at 500˚ F until tender, 8 to 10 minutes. 
  4. Remove broccoli from heat and set aside.
  5. Cut out the segments from 1 orange. Add to broccoli.
  6. Whisk 2 tablespoons of orange juice with 1/4 cup mayonnaise, 2 tablespoons olive oil, 1 tablespoon each white wine vinegar and orange marmalade and 2 teaspoons Dijon mustard. 
  7. Drizzle the broccoli and orange segments with the dressing.
  8. Toss to coat.
Yield: 4 servings
