Ingredients:
- 1 avocado (ripe, organic)
- 1/2 cup buttermilk (organic)
- 1 T apple cider vinegar
- 1 scallion (or 2-3 green onions - organic)
- chopped dill (1 small packet of fresh dill - organic)
- parsley - 1 bunch fresh (organic)
- salt (to taste)
- pepper (to taste)
- 1 small head Romaine lettuce (organic
- 1/2 cup grape tomatoes (organic)
- 1 stalk celery (organic)
- shredded carrots (organic)
- cayenne pepper hot sauce
- blue cheese crumbles (organic)
Directions:
- Make dressing: Puree 1/2 avocado with 1/2 cup buttermilk, 1 tablespoon each cider vinegar and water, 1 scallion and 2 tablespoons each chopped dill and parsley until smooth; season with salt and pepper.
- Combine 1 small head chopped lettuce and 1/2 cup each halved grape tomatoes, sliced celery and shredded carrots in a large bowl. Add in diced up remaining avocado.
- Drizzle with the dressing and 1 tablespoon cayenne pepper hot sauce.
- Top with crumbled blue cheese.
