Buffalo-style Chopped Salad

Ingredients:

  • 1 avocado (ripe, organic)
  • 1/2 cup buttermilk (organic)
  • 1 T apple cider vinegar
  • 1 scallion (or 2-3 green onions - organic)
  • chopped dill (1 small packet of fresh dill - organic)
  • parsley - 1 bunch fresh (organic)
  • salt (to taste)
  • pepper (to taste)
  • 1 small head Romaine lettuce (organic
  • 1/2 cup grape tomatoes (organic)
  • 1 stalk celery (organic)
  • shredded carrots (organic)
  • cayenne pepper hot sauce
  • blue cheese crumbles (organic)

Directions:
  1. Make dressing: Puree 1/2 avocado with 1/2 cup buttermilk, 1 tablespoon each cider vinegar and water, 1 scallion and 2 tablespoons each chopped dill and parsley until smooth; season with salt and pepper. 
  2. Combine 1 small head chopped lettuce and 1/2 cup each halved grape tomatoes, sliced celery and shredded carrots in a large bowl. Add in diced up remaining avocado.
  3. Drizzle with the dressing and 1 tablespoon cayenne pepper hot sauce. 
  4. Top with crumbled blue cheese.
