Orange-Date Candied Yams with Marshmallows

 

Ingredients:

  • 4-5 yams
  • 1-2 oranges
  • 1 cup orange juice 
  • 8-10 Medjool dates (pitted)
  • 1 tsp vanilla extract
  • 1 package of vegan marshmallows
Directions:

Place the yams on a foil-lined cookie sheet and bake them in the oven at 400°F for about 1 hour - until a knife inserts easily into the yam, indicating that it is thoroughly cooked. 

Slice the oranges into thinly sliced, rounds. Set aside.

Blend the dates, orange juice, and vanilla extract until completely smooth. Set aside.

When done, remove the yams from the oven.

Turn oven down to 350°F.

Peel the yams (be careful not to get burned) and slice the yams into 1 inch thick rounds.

Set the yam rounds in a greased casserole, placing orange slices every couple of yams or so throughout the dish.

Cover with the orange-juice-date mix.

Top with marshmallows.

Bake at 350°F.
