Oatmeal-Mushroom Patties


Ingredients:

3 cups rolled oats, instant or regular
1 cup cashew gravy (see recipe below)
1/4 cup olive oil
1/2 cup finely chopped walnuts or pecans
1 large onion finely chopped
1 tsp soy sauce
1 cup diced mushrooms
1 pkg cream cheese (optional)
2 eggs
1/2 tsp salt

Cashew Gravy:

2 cups raw cashews
2 cups water
1/8 cup Bill's Best Beaf Seasoning
Salt to taste

Blend gravy until completely smooth. Season to taste. Gravy will thicken when cooked. Make enough gravy to add to the patty recipe and top the patties - serve with gravy.

Directions:
1. oil the skillet and preheat it while you make up the patty mix.
2. Mix all the patty ingredients together in a mixing bowl. Note: the recipe is very flexible... add what you like but watch the consistency and seasonings. The patty mixture should form  balls, when pressed together.
3. Form the patty mixture into balls and place the balls in the skillet and flatten them with the spatula. Allow them to cook until lightly browned, then turn over and brown the other side.
4. Place the patties in a Pyrex casserole dish (lightly oiled) in preparation for baking.
5. Top with gravy.
6. Bake at 350 degrees until the gravy is bubbly.
